It’s convenient to buy frozen fish fillets but when there’s an opportunity to go to Farmer’s Market for good-quality fresh fish, I prefer to buy a whole slab and have it prepared according to my specifications. For instance, I chose the tail end of a salmon and had it weighed.

Then, I had the fish filleted so I could cook a main dish with the fillets — something bombastic like this baked salmon with buttered vegetables a la Conti’s.

I brought home the bones too because I use fish bones (and heads if I have some) for making fish stock. The bones and heads are the move flavorful parts of the fish, after all.



I’ve never tried buying fish from farmer’s. I usually purchase frozen fillets from the grocery. Or buy a huge fish whenever we come from the province and fillet the entire fish myself. Never realized somebody can actually do the filleting for me.

Fresh is always best— at talaga namang great place to buy fish and other fresh items ang Farmer’s…lapit pa sa amin… hehe—:P

Early morning is always best but there are deliveries too at around 2.30 p.m. so it’s still possible to buy good fish in the afternoon.
